Crush the peppermint candy. There should be small chunks but not powdered.
Whisk the egg yolks and sugar. Mix in the peppermint chunks. Whip the cream in a separate bowl. When the cream is fluffy turn it into the peppermint mixture. Place the bowl in the freezer. Stir once an hour for the first few hours. Freeze for at least 4-5 hours before it is served.
